Powermeal a Week!

Welcome to week 2 of Kasey’s Powermeal a Week Challenge!

Last week I featured a “power” breakfast that while delicious, seriously lacked some veggies! So this week I’m making up for it with a dinner recipe. This recipe is perfect for summer grilling! It is light and delicious and is inspired by some of my favorite summer fruits! Enjoy!

Grilled Coconut Shrimp Skewers with Peach, Watermelon and Strawberry Salsa!

For the Salsa: 

Ingredients: 

  • 6 strawberries
  • 1 peach
  • 3/4 cup watermelon

Directions:  Chop all of the fruit into small chunks. Place the strawberries and peach in a food processor and pulse until the pieces start to break up. Add in the watermelon and continue to pulse until the fruit resembles a salsa. Optional: add lime zest into the salsa once combined.

For the Skewers: 

Ingredients: 

  • 3/4 lb. Shrimp
  • 3/4 cup finely shredded unsweetened coconut
  • 2 egg whites
  • 16 pineapple chunks

Directions: Begin by placing your egg whites and coconut in two separate plates. Dip the shrimp into the egg white and then into the coconut to lightly coat the shrimp. Place 4 shrimp onto a skewer alternating between shrimp and pineapple. This will make 4 skewers. Grill your skewers on a grill, being careful not to use too hot of a flame or the coconut will burn. Also watch the coconut as it gets brown, once it starts to brown it will burn shortly after. Cook until the shrimp is done and pink!

Serve your skewers and salsa any way you like! I had mine on top of a baby spinach salad, but you could also serve them with a side of grilled vegetables if you like! Enjoy!

    Mmm! I love the simplicity of this recipe! It seems like most coconut shrimp calls for flour in the breading, so it’s exciting to see a version is without! And the accompanying salsa looks absolutely delicious! What a great way to take advantage of summer fruits. :)

      I have always made coconut shrimp with coconut flour before this recipe too so I was really excited that this turned out well! Just make sure you get the really finely shredded coconut and it should work perfect! The Games should be on ESPN2 later in the summer so hopefully you can catch them then :)
