Pumpkin Spice Oatmeal Chocolate Chip Muffins

Ingredients: 

  • 2 cups pumpkin
  • 1/2 cup gluten free oats
  • 2 scoops vanilla Shakeology
  • 2 eggs
  • 6 egg whites
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 2 tbs. enjoy life mini chocolate chips
  • 1/4 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1/4 tsp. each of ginger, allspice, and nutmeg

Directions: 

  1. Preheat the oven to 350 degrees.
  2. Blend together the pumpkin, eggs, whites, and vanilla shakeology.
  3. Mix in the 1/2 cup oats almond with baking powder soda, and spices.
  4. Lastly stir in your chocolate chips and pour batter in well-greased muffin tins.
  5. Bake for 20-25 minutes until tops are browned.

Makes 12 muffins
