What I Ate Wednesday

Happy Wednesday! We’re halfway through the week. Welcome back to another What I ate Wednesday, hosted by Jenn from Peas and Crayons. We’re celebrating love your veggies month but posting some of meals from the past week I’m noticing I am lacking a bit in the veggie department. Apparently I’ve been on fruit overload this week and I’m thinking maybe I need to balance it out a bit with some more veggies. As usual this is not a day’s meals but rather a collection of some of my favorites from the past week.

If you read last Wednesday’s post you might remember I was doing a bit of an experiment with not meal prepping. I learned a ton last week that I will definitely share in detail more but for now I feel like I am back on track with normal, intuitive eating. For me this means a little prep of basics, like veggies and protein, but at the same time I’m not making full meals ahead. This way I can go along with cravings and hunger signals and not worry about a “plan”. I also still have veggies prepped so I actually eat them throughout the week. If I don’t cook them ahead, I know I won’t eat them!

Sometimes it can be really helpful to take a step back and look at what you’re doing. Taking away all my planning was really eye opening and definitely pushed me out of my comfort zone. Even though I’m a nutrition coach, I’m always learning and this was just another example of new things to learn. Onto my meals…


Here is what I prepped: carrots, sweet potato fries, zucchini, and hard boiled eggs.


Last week I wasn’t satisfied with breakfast at all and I knew eggs would fill me up but never wanted to cook them. I took that as a sign and prepped a bunch of hard boiled eggs to have on hand for the week. If I want them for breakfast great, but if not they make great snacks too.


Easiest lunch ever. Chicken sausage and pineapple. There were carrots too.


At least there were some veggies!

I made chicken ahead for protein and have been having a couple pieces for a snacks. Quick and easy.


Apple and pistachios.

Experimented with my first cauliflower pizza crust. More details soon….


And finally my favorite nighttime snack. Plain Greek yogurt with cinnamon.

Which do you prefer: Fruits or vegetables??? I love fruit but vegetables, not so much 😉

What I Ate Wednesday

Today I have some meals from the past few days to share with you. Remember this is just a snippet of what I eat in a few days and is certainly not a days’ worth or food. Keep in mind everyone has different needs and it’s all about finding what works for you.

I was feeling pretty uninspired this Wednesday to share my meals with you. Things have been pretty boring around here but I still wanted to keep you updated. So as normal I’m going to share some of my meals from the week, but in addition to that I’m going to talk about a little experiment I have going on. Remember on Monday I mentioned that I didn’t do any meal prep this week? Well there was a reason for it. As a health coach I think it is very important to practice what I preach and eat according to cravings, what I feel like in the moment, and listen to my body. When I meal prep for the week I am not necessarily able to do this really well.


I’ll admit it for some people meal prep works wonders and it can definitely keep me on track for the  week, but I also often find myself not really wanting what I had made or planned for and feeling unsatisfied from my meals, simply because they weren’t what I wanted.


I’ll be honest with you, I am a fan of structure. I love to know I have balanced, veggie packed meals ahead of me, but I am learning to let go of this need to always eat the “perfect” meal. Yes I am a nutrition coach, but that doesn’t mean I have to love kale and crave it with every meal.


The past few days have admittedly been a challenge. Every meal I find myself asking what I feel like and come up really unsure of an answer. For so long I had this part of my brain turned off. I was so out of sync with my body and so determined to stick to a “plan”.


Despite the challenges it has been eye opening. I am learning so much about what I need, desire, and crave. I plan on writing more about this the more I explore it but I have already learned a lot in a few days time.


Does this mean I will never prep again? No I am going to continue doing this for a bit and then once I have a general ideas for what I crave and need I can get back to prepping things ahead. Why not have a couple dinner ideas to make on hand but if I don’t feel like them no big deal.


I also bought less groceries on Sunday and plan on making a couple trips later in the week for things I need or crave. Maybe it’s a bit less convenient but I actually think I will save money by not buying things and letting them go to waste. I did walk around a bit lost in the grocery store with no real list or outline other than a couple things, but as I said it’s a learning process and the more that I experiment, the more I will learn what exactly I will want or need for the week.


I even sat down to an unplanned dinner with my family one night. This may not be a big deal for you, but as I mentioned on Friday, it is a simple thing that I really cherish now since it had been cut out of my life for so long. My mom is an amazing cook and it is so sad that I wouldn’t eat certain things because I didn’t know how much oil was used or how many calories were in a dish. I now have no issue with that now, as you can see, and that is and always will be a huge accomplishment in my book!

What I Ate Wednesday

Breakfasts have been these protein, egg muffins I made on Sunday.

Lately I’ve been on a salad kick with lots of fruit in them for lunches.


Baby spinach, strawberries, oranges, quinoa, and almonds. 


Spinach, grapefruit, and chicken. Sweet potato fries on the side. 


Kind Bar for Snacks. 


Quinoa, tomatoes, spinach, and turkey. 


And gluten free beef stew to warm me up! 

In other news we’re still facing piles of snow in Boston and I’m not thrilled about it!


At least one of us is ready for the cold!

As usual I’m a constant work in progress on getting in more veggies and this week was no different. Here are some of my favorites from the week. Keep in mind I never post a full day of meals, these are just some random favorites from the week.

My weekly meal prep has been a lifesaver this week. I’ve had not much desire to cook anything so the convenience of having everything done has been even better than usual! A lot of these are upcoming recipes to post too so keep your eyes out for them coming up!


Spicy spaghetti squash and veggies. #Plantpower approved


Lean ground meat, zucchini, and bell pepper. Some quinoa is hidden underneath. 


Greek yogurt with peanut flour and blueberries. 


Spinach Salad.


Paleo egg muffins for breakfast. 


Spicy sweet potatoes, black beans, veggies, and goat cheese.


Dinner. More sweet potatoes, black beans, and veggies with spinach salad on the side.

What I Ate Wednesday

Happy Wednesday! Welcome back to another What I ate Wednesday! Hosted by Jenn over at Peas and Crayons. This week is another collection of meals from the past few days plus my weekly meal prep.

Not sure if anyone has actually noticed but it is very rare that I will just post a full day of what I ate. Reason being I hate comparison. I remember way back when I was the most critical of my eating I would read up as best as I could on how many calories I should eat, what I should eat, etc… What I ate Wednesday would have been a gold mine for me. I would have taken notes, thought I was eating too much, not enough etc… Every body is different and no two people are going to have the same needs when it comes to nutrients. So long story short this is why I don’t believe in posting a full, exact day of meals, because I don’t think anyone should fall into the comparison trap. Your body knows best what you need, so listen to it!

Okay that being said let’s get on to some of my favorite meals from the week.


First off, the prep. Lean ground meat, quinoa, bell peppers, roasted carrots, broccoli, and zucchini. Perfect to mix and match for meals throughout the week. 


Example one of prep coming together: Quinoa, lean ground beef, broccoli, and carrots. 


Example 2: Quinoa, edamame, broccoli, zucchini, bell pepper, and carrots.


Spaghetti Squash Bake (recipe is coming I’m just going to change some things around) Served with shrimp.


Paleo Dinner: Steak, asparagus, and spinach and cherry tomatoes. 


Cooked Mixed Berries. 


To make these all I do is combine blueberries, raspberries, and blackberries and simmer over low heat with 1/2 of an orange zested along with the juice from 1/2 of the orange.

Easy Dessert. 

Last but not least I had to share this picture of Sophie. It’s been freezing and she loves to be outside so I make her wear sweaters. I promise I’m not that person who just dresses her for fun!…or maybe I kind of do 😉
