Pumpkin Protein Cookies

So obsessed with these cookies!! They’re protein packed and low in carbs and fat :)


  • 2 tbs. coconut flour
  • 1/2 cup pumpkin
  • 1 scoop protein
  • 1/2 tsp. baking powder
  • 3 tbs. egg whites
  • 1/2 cup water 


Mix together all ingredients to a batter consistency. Drop cookies onto a baking sheet. Bake at 350 degrees for 25 minutes!! Enjoy!

Makes 6 cookies and 1 serving :) 

Gluten Free Peanut Butter Bites

I am a peanut butter addict and you gotta try these!! Just made these peanut butter bars from the fixate cookbook and I’m obsessed! Even my dog, Sophie loved them.


The ingredients were simple just peanut butter, honey, eggs, and baking powder! I am a huge fan of the fewer the ingredients the better!

Pumpkin Spice Oatmeal Chocolate Chip Muffins



  • 2 cups pumpkin
  • 1/2 cup gluten free oats
  • 2 scoops vanilla Shakeology
  • 2 eggs
  • 6 egg whites
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 2 tbs. enjoy life mini chocolate chips
  • 1/4 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1/4 tsp. each of ginger, allspice, and nutmeg


  1. Preheat the oven to 350 degrees.
  2. Blend together the pumpkin, eggs, whites, and vanilla shakeology.
  3. Mix in the 1/2 cup oats almond with baking powder soda, and spices.
  4. Lastly stir in your chocolate chips and pour batter in well-greased muffin tins.
  5. Bake for 20-25 minutes until tops are browned.

Makes 12 muffins

Paleo and Gluten Free Chocolate Chip Blondies

Since being diagnosed with Celiac disease the adjustment has been pretty easy to make. Most of the food I eat is naturally gluten free anyway and when I crave things like cereal or bread there are plenty of gluten free replacements available. Every once in a while though I do get a twinge of jealously when I see a really awesome recipe using regular flour or other gluten contaminated ingredients. I recently saw this awesome recipe on Shay’s blog and thought they sounded amazing. I got inspired to make my own Paleo and gluten free version that would hopefully be just as good. Now I can’t promise these are any comparison to the original but they did get my gluten-eating sister stamp of approval!



  • 3 eggs
  • 1/2 cup cashew butter
  • 1/4 cup coconut sugar
  • 1/4 cup almond meal
  • 1 tsp. vanilla
  • 1/2 tsp. baking powder
  • 1/2 tsp. sea salt
  • 1/2 cup enjoy life chocolate chips


  1. Preheat your oven to 350 degrees.
  2. In a mixing bowl lightly beat your eggs and cashew butter together.
  3. Add in the vanilla and continue to mix.
  4. Slowly mix in the almond flour, coconut sugar, baking powder, and sea salt.
  5. Lastly gently mix in your chocolate chips.
  6. Pour into a greased 8×8 baking pan.
  7. Bake for 18-20 minutes until browned.
  8. Let cool, slice into bars, and enjoy!

Makes 12 bars
