Egg Muffins

I am not a morning person. So for me to make sure I get in a healthy breakfast in the morning, and get my metabolism started for the day, I often like to prep something ahead for the week. These egg muffins are so easy to make, and save me time throughout the week. Play around with the recipe and add in mix ins as you like!

Ingredients: 

  • 12 eggs
  • Baby Spinach
  • Sea salt and pepper

Directions: 

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, beat together 12 eggs, and 4 cups of baby spinach, wilted.
  3. Season as you like with sea salt and pepper.
  4. Pour into well greased muffin tins.
  5. Bake for 15-25 minutes.

Makes 12 Muffins

Single Serving Vegetable Frittatas

Since I’ve been little breakfast has always been my favorite meal of the day. I’ve also always had a love of sleep, so while I do love any chance for breakfast, I don’t necessarily love waking up early to make it. Because of this meal prep has been a lifesaver. Most mornings for me involve a small breakfast before heading to the gym and I almost always get my breakfast prepared for the week on Sunday. Some of my favorite easy foods to cook ahead are protein pancakes, hard boiled eggs, and protein muffins. A recent favorite however, has been these vegetable frittatas. They’re easy to make, are a perfect mini meal before a workout, and are packed with protein and vegetables. I hope you enjoy them just as much as I do.

Ingredients:

  • 1 medium zucchini
  • 2 medium carrots
  • ½ red bell pepper
  • Red pepper flake
  • Around 24 egg whites

Directions:

  1. Preheat your oven to 350 degrees.
  2. Chop up your vegetables into small pieces.
  3. In a skillet sauté the vegetables until cooked and sprinkle with crushed red pepper flake.
  4. In a well-greased muffin tin scoop your vegetables into each muffin cup about halfway full.
  5. Fill the cups ¾ of the way full by pouring in egg whites.
  6. Bake at 350 degrees for 20-25 minutes until the edges brown and the tops are cooked.

Makes 12 Muffins
