Coconut Muffins

These muffins are gluten free, and Paleo, plus they’re 21 Day Fix Approved!! I like to make a batch for the week to have on hand. They’re great warmed up and feel free to get creative with add-ins!

Ingredients: 

  • 8 Eggs
  • 1 cup coconut flour
  • 1 1/3 cups light canned coconut milk
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 tsp. vanilla or coconut extract

Directions: 

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl beat together the eggs.
  3. Mix in the remaining ingredients.
  4. Pour into a well greased muffin tin.
  5. Bake at 350 for 20 minutes until edges are browned.

Makes 18 Muffins

Sweet Potato Meatloaf

This has become one of my favorite prep-ahead meals lately! It is the perfect complete meal to pack up and go for work. It has a great balance of carbs, protein and healthy fat and was so delicious!

Ingredients: 

  • 1 small zucchini
  • 1/4 cup raisins
  • 1 sweet potato, baked
  • 1lb lean ground beef
  • 1 egg
  • 1 tbs. cinnamon

To make it I sauteed the zucchini and raisins in a skillet over low heat.
I combined these in a bowl with the mashed sweet potato (no skin) and let them cool, while the oven preheated to 400 degrees.
Once cooled, I mixed together the egg, ground beef, and cinnamon, along with the zucchini and sweet potato mixture.
I put the mixture into a well-greased loaf pan and baked 40-50 minutes.

Makes 4 Servings.

Egg Muffins

I am not a morning person. So for me to make sure I get in a healthy breakfast in the morning, and get my metabolism started for the day, I often like to prep something ahead for the week. These egg muffins are so easy to make, and save me time throughout the week. Play around with the recipe and add in mix ins as you like!

Ingredients: 

  • 12 eggs
  • Baby Spinach
  • Sea salt and pepper

Directions: 

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, beat together 12 eggs, and 4 cups of baby spinach, wilted.
  3. Season as you like with sea salt and pepper.
  4. Pour into well greased muffin tins.
  5. Bake for 15-25 minutes.

Makes 12 Muffins
