Trader Joe’s Shopping List

I get it, grocery shopping can be overwhelming, especially with all of the options. The one thing I always get asked about is what I buy at Trader Joe’s so I wanted to give a breakdown of my go-to staples, especially for our ladies diving in to round two of Gut Protocol.

Here is my go to list currently:

Frozen Fruits & Veggies:

⁣𝘔𝘺 𝘮𝘢𝘪𝘯 𝘳𝘶𝘭𝘦 𝘰𝘧 𝘵𝘩𝘶𝘮𝘣 𝘯𝘰 𝘮𝘢𝘵𝘵𝘦𝘳 𝘸𝘩𝘦𝘳𝘦 𝘺𝘰𝘶 𝘢𝘳𝘦: always check the ingredients list. The shorter the list the better, and try to go for ingredients you understand & can pronounce. ⁣Everything listed is gluten free (I have Celiac) and will all be Gut Protocol approved unless noted. ⁣

Meal Prep Monday

Weekly Meal Prep! Since y’all always want ideas for food, I wanted to keep these coming! It always takes me about an hour and sets me up for success for the week, and remember it doesn’t have to be fancy! I use loads of frozen fruits & veggies, and pre prepped proteins through the week too.
Here’s what I meal prepped this week:
🫐Breakfasts (gluten free):
✔️Broccoli Slaw: Cooked with coconut aminos (tastes like the inside of a spring roll) and I’ll add eggs in the mornings
✔️Protein Oats: Overnight oats with a twist, I promise I’m sharing the recipe this week.
🍳Proteins
✔️Crockpot Chicken: So easy just put boneless chicken breast in your crockpot, add spices of your choice, ¼ cup water and cook on low 4-6 hours
✔️93% Lean Ground Turkey: Cooked in a skillet
🥦Vegetables
✔️Greek Beans
✔️Cauliflower Rice with Green Beans & Diced Tomatoes: I’ll add ground turkey to these for dinners
✔️Spinach, Arugula, Shredded Carrots, & Tomatoes in the fridge ready for salads

Mango Coconut Stir Fry

Every once in a while in the winter I need a little reminder that summer is not too far gone. That someday soon it will be warm and sunny again there will be zero snow in sight. I know I have months to go until this actually happens but that doesn’t mean I can’t pretend. This stir fry reminds me of summer while still giving me that warm comforting feeling I crave from my fall meals. The addition of mango and coconut makes me feel like I’m in Hawaii even though I’m eating this in cold snowy Boston!

Ingredients:

  • 1/2 cup carrots, diced
  • 1 and a 1/2 cups sugar snap peas
  • 1 red bell pepper, diced
  • 1 mango, cubed
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup coconut aminos
  • 1 tbs. unrefined coconut oil
  • Protein of choice 1 lb. if using animal protein (I used precooked turkey breast from Trader Joe’s, but you could use chicken breast, beef, shrimp, tofu, anything you like)

Directions:

  1. Chop up all of your vegetables into small pieces as well as your protein if necessary.
  2. Warm a large skillet with 1 tbs. coconut oil.
  3. If cooking raw meat saute your meat first, if not skip this step.
  4. Add your veggies to the skillet and saute until tender.
  5. Add in the coconut flakes, precooked protein of choice, and drizzle with coconut aminos.
  6. Continue to saute until everything is hot.
  7. Serve and enjoy!

Makes 4 servings

I ate mine as is but you can serve with brown rice, quinoa, or cauliflower “rice”.
