Healthier Nachos


I’ve been absolutely obsessed with these!!! They’re so simple to put together and so filling!

You can tweak them to include your favorites but here’s how I make them.

Slice up 3 small corn tortillas into triangles (I like the Mission street taco gluten free corn tortillas).

In a skillet saute your tortillas until they start to crisp up.

Layer on a baking sheet your tortilla chips, shredded cheese, beans of your choice (I used chickpeas but black beans or pinto beans would be great), lean ground beef, turkey or chicken breast, sliced up tomatoes, shredded carrots, and shredded iceberg lettuce.

Pop into an oven at 400 degrees for 3-4 minutes until your cheese is melted and enjoy.

I sprinkled with Trader Joe’s everything but the elote seasoning but use any seasoning you like.

Grain Free Crockpot Chicken Noodle Soup

๐˜Š๐˜ณ๐˜ข๐˜ท๐˜ช๐˜ฏ๐˜จ ๐˜Š๐˜ฐ๐˜ฎ๐˜ง๐˜ฐ๐˜ณ๐˜ต ๐˜๐˜ฐ๐˜ฐ๐˜ฅ?!ย  This chicken soup was so easy to make and the perfect healthy, warming meal to have prepped all week long โฃ

โฃ๐˜๐˜ฏ๐˜จ๐˜ณ๐˜ฆ๐˜ฅ๐˜ช๐˜ฆ๐˜ฏ๐˜ต๐˜ด: โฃ

  • 1lb Boneless Skinless Chicken Breast โฃ
  • 1-2 packages of frozen veggies of your choice (I used a broccoli, carrot, and cauliflower blend) โฃ
  • 1 32 oz container low sodium chicken brothย  โฃ
  • Herbs de Provence, sea salt, and pepper to your liking โฃ
  • 2 cans Palmini noodles โฃ

  1. In a crockpot sprayed with avocado oil, layer your chicken breast, vegetables, broth, and spices.
  2. Cook on low 4-5 hours and shred your chicken. โฃ
  3. Add in your drained and rinsed palmini noodles and let it sit on low 30 minutes longer or so. โฃ

Healthy Fried Rice

This nutritionist is not the biggest fan of veggiesย 

I’m a picky eater too so I’m always trying to figure out ways to sneak them in my diet (just like a 5 year oldย ๐Ÿ‘ญ

This is super easy to make.ย 

In a skillet sprayed with coconut oil, sautรฉ 1 bag of broccoli slaw blend (mine had broccoli, cabbage, and carrots). Add in coconut aminos or gluten free soy sauce. Serve over cauliflower Rice with a protein of your choiceย ๐Ÿ—
