Monster Protein Cookie

So many of you requested the recipe so I wanted to share. This was so good!! Not quite a funfetti cookie but great macros and a good swap.⁣

𝐌𝐨𝐧𝐬𝐭𝐞𝐫 𝐏𝐫𝐨𝐭𝐞𝐢𝐧 𝐂𝐨𝐨𝐤𝐢𝐞 🍪⁣

𝘔𝘪𝘹 𝘵𝘰𝘨𝘦𝘵𝘩𝘦𝘳: ⁣
20 grams protein powder (Pictured is with a whey, but I also made it with casein later in the week and it was just as good)⁣
46 grams liquid egg whites ⁣
1 tsp baking powder ⁣
1 tbs. vanilla skinny syrup (you could swap with stevia and vanilla extract) ⁣
1 packet 100 calorie better oats (could swap with ¼ cup quick oats) ⁣
1/4 cup of water⁣
⁣
Mix your ingredients together and let sit in the fridge 2-3 hours to thicken. Mix in sprinkles, chocolate chips, whatever you like and bake at 350 for 15 minutes. ⁣

Chocolate Protein Cookies

 These are amazing, super low in calories and all ingredients you can feel good about!

INGREDIENTS
1 Scoop Chocolate Protein Powder (this the brand I use)
1 tsp. Unsweetened Cocoa Powder
1 tsp (5g) sugar free chocolate jello pudding mix
½ tsp baking powder
100 grams canned pumpkin
3 tbsp liquid egg whites
1 tbsp mini chocolate chips
INSTRUCTIONS
1 Preheat oven to 350 F. Line a baking sheet with parchment paper.
2 Combine the protein powder, cocoa, baking powder, and pudding mix in a medium sized mixing bowl.
3 Add in the pumpkin and egg whites and mix thoroughly; then fold in the chocolate chips.
4 Scoop the dough onto the pan using a spoon. Divide the dough evenly into 12 cookies (or however many you choose to make).
5 Bake for about 8-10 minutes, or until toothpick inserted in center comes out clean. Be sure to watch carefully so you don’t over-bake.
6 When cookies are done, remove from pan with a spatula and place on a cooking rack (otherwise cookies will keep baking on the hot pan).

Pumpkin Protein Cookies

So obsessed with these cookies!! They’re protein packed and low in carbs and fat :)

Ingredients:

  • 2 tbs. coconut flour
  • 1/2 cup pumpkin
  • 1 scoop protein
  • 1/2 tsp. baking powder
  • 3 tbs. egg whites
  • 1/2 cup water 

Directions: 

Mix together all ingredients to a batter consistency. Drop cookies onto a baking sheet. Bake at 350 degrees for 25 minutes!! Enjoy!

Makes 6 cookies and 1 serving :) 

Pumpkin Chocolate Chip Protein Cookies

Want a sweet tooth fix, without wrecking your healthy eating plan?! These cookies are the perfect mid-afternoon snack and you feel like you’re really indulging. Bonus…they’re super easy to make!

Ingredients: 

  • 1 scoop whey protein (I use PEScience or Beachbody Performance Line)
  • 3/4 cup pumpkin puree
  • 1 T liquid egg whites
  • 1/2 tsp. baking powder
  • 1/2 tsp. vanilla extra
  • 1 tbs. enjoy life mini chips
Directions: 
  1. Preheat oven to 350 degrees.
  2. Mix all of your ingredients into a bowl, adding in the chocolate chips last.
  3. Drop batter into cookies on a baking sheet.
  4. Bake for 15-20 minutes.
  5. Let cool and enjoy!

Makes 1 serving and about 6 cookies :)
